DESCRIPTION:Removing the mystery of making fresh pasta\, accompanied by small plates. \nPasta and authentic antipasto are both comfort foods that many of us enjoy. However\, what is presented to us on supermarket shelves and some high street establishments are versions that have an identity of their own\, which of course has its place and the benefit of convenience. \nThose who have been to Italy have no doubt experienced authentic pesto or mozzarella\nand the unique difference in flavours\, textures in the other ingredients often\ncombined with these foods. The combination of essential techniques and fundamental\ningredients is what makes the flavours stand out including the most simplistic\ncomponent yet the one so often that is overlooked; water!\nOnce you have mastered the structure of making the correct dough\, it opens boundless\noptions\, possibilities and variations. \nOn this creative workshop\, we also unfold antipasto from more remote places; lemon and fennel infusion\, vegetables doused in Vermouth just to give you an appetiser. \nWe aim to push the boundaries further; we unveil creative yet authentic advanced\nconcepts that will astound family and friends including an original and early method\nof pasta making using a chitarra; pasta guitar! The recipes and techniques can be\napplied and adapted to enjoy as part of a weekend gourmet experience or put together mid week when time is restricted. \nA workshop well investing in if you are passionate about authentic pasta and its supporting components. DESCRIPTION:Southern Italy has always been a vegetarian haven; influenced by economics\, Saracen history and climate. Whilst it’s the home for well known pasta and pizza dishes\, the culinary repertoire extends well beyond these all too familiar foods. We venture out of the big cities tourist menus and share some of the region’s recipes. The emphasis here is “cucina casalinga” which is best described as home cooking although we do celebrate the course with some gourmet delights too. Tomatoes are a favourite ingredient and despite our familiarity with them\, often they are cooked incorrectly.  We show you how; The Amalfi way; In addition melanzane\, fennel and artichokes infused with lemon\,\nchestnut gnocchi\, aubergine involtini\, mushroom drenched in wine and much more.  Note; we make seasonal changes to this workshop.

DESCRIPTION:Familiar flavours from the Lebanon and Middle East all too often seem to be shrouded like mist\, delicate\, light and sometimes the spice and herb blends not obvious yet they complement the main ingredients. This workshop indeed embraces some of these very qualities by working oils and spices mixes to ingredients most of us are already familiar with in a very sophisticated way; saffron fused in rosewater\, cardamoms ground with cinnamon and figs and like a mosaic they come together on a plate. The course unfurls unusual dishes from Syria\, Lebanon and Maghreb which represents the North African countries. Unlike our other workshops which aim to create a balanced plated menu\, this capitalizes on the mezze concept which is a way of eating and lifestyle within Middle Eastern communities. This course content is a far cry from what so many high street Middle East restaurants both present and represent. However\, for a large number of food outlets it still remains the old style flocked wallpaper menus despite the fact the cuisine has changed dramatically in large cities throughout India. \nNew ingredients throughout India are celebrated and expanded beyond their traditional limits and old style heavy oil and spiced masala are replaced with olive oil and other Mediterranean ingredients and international spices. \nThe nouveau Indian lighter cuisine menu will come to some as a surprise and a refreshing change from the all too familiar traditional menus. Our seasonal menus include pomegranate paste aubergine\, olive and rosemary chutney soufflé\, sun dried tomato\, basil and chilli dosa style crepes\, fennel coconut and lemon bakes and the line up continues with a real contemporary twist of flavours. This is Indian cuisine with a very different flair and designed to impress. \nThis workshop is suitable for both vegan/vegetarian preparations and\, seasonal adjustments are made.

DESCRIPTION:With the growing awareness of lifestyle costs\, our eating patterns have changed to include cooking at home as a fundamental lifestyle choice. Whether you are a vegetarian\, vegan or neither this course covers a lot of fundamentals and\, infact\, most attending are neither of the above but are interested to incorporate more meat free options into everyday cooking. This intense workshop delivers practical recipes for both every day eating when time maybe short but nutrition is a priority through to weekend treats to share with family and friends. The content aims to open doors to a creative approach and reapplying everyday ingredients that one already maybe familiar with albeit applied in a very different way. This also introduces new ingredients to adapt and replace traditional pasta\, potato etc. carbs into daily cooking. This is an extended workshop incorporating some features from our professional workshop but\, equally suitable for beginners. The workshop commences with a detailed recipe review incorporating essential culinary skills\, techniques and consumer knowledge followed by the bulk of the workshop which is hands with each person cooking their recipes independently and ends at approximately 16.00 with a lunch break included; the remaining cooked cuisine is taken home. The island captured by the Normans\, Romans\, Saracens and Moors which today has left a complex culinary trial. The  Influxes of different nationalities over many centuries\, the cuisine is so much influenced by French\, Greek\, Spanish  Maghreb heritages and has a very distinctive identity which is different in many ways to mainland Italy; If you have attended our Italian workshop\, this is very different with no recipe repetition. \nThis workshop showcases many of the island’s traditional and local recipes. Some of the highlights feature when in season\, blood orange and tomato aubergine\, pistachio and spice infusion\, spiced and roasted ceci and Moorish cumin spiced spinwheel pastries together with its legends\, superstitions and old wives tales. \n

DESCRIPTION:A culinary melting pot; for many\, this may appear a sophisticated extension to familiar Indian cuisine but\, by definition it is a delicious combination of native African\, French\, Chinese and Indian ingredients and flavours that come together to create a unique cuisine. As a colony of France during the 18th century\, Mauritius has had strong ties with French culture followed by the end of the 19th century saw the arrival of Chinese immigrants\, who created another layer to the established French gastronomy creating a truly unique fusion. Amongst this emulsion of flavours and ingredients there have been a large Indian community of workers during the 19th century who too added their spices to the pot! This workshop showcases the best of flavours infused with established French culinary disciplines as recognised today. Whether you are a vegetarian\, vegan or neither this course covers a lot of fundamentals and\, infact\, most attending are neither of the above but are interested to incorporate more meat free options into everyday cooking. This intense workshop delivers practical recipes for both every day eating when time maybe short but nutrition is a priority through to weekend treats to share with family and friends. The content aims to open doors to a creative approach and reapplying everyday ingredients that one already maybe familiar with albeit applied in a very different way. This also introduces new ingredients to adapt and replace traditional pasta\, potato etc. carbs into daily cooking. This is an extended workshop incorporating some features from our professional workshop but\, equally suitable for beginners. The workshop commences with a detailed recipe review incorporating essential culinary skills\, techniques and consumer knowledge followed by the bulk of the workshop which is hands with each person cooking their recipes independently and ends at approximately 16.00 with a lunch break included; the remaining cooked cuisine is taken home. DESCRIPTION:Familiar flavours from the Lebanon and Middle East all too often seem to be shrouded like mist\, delicate\, light and sometimes the spice and herb blends not obvious yet they complement the main ingredients. This workshop indeed embraces some of these very qualities by working oils and spices mixes to ingredients most of us are already familiar with in a very sophisticated way; saffron fused in rosewater\, cardamoms ground with cinnamon and figs and like a mosaic they come together on a plate. The course unfurls unusual dishes from Syria\, Lebanon and Maghreb which represents the North African countries. Unlike our other workshops which aim to create a balanced plated menu\, this capitalizes on the mezze concept which is a way of eating and lifestyle within Middle Eastern communities. This course content is a far cry from what so many high street Middle East restaurants both present and represent. DESCRIPTION:The cradle of occidental culture is what the Mediterranean is often referred to and this is nowhere more accurate than in Sicily. The island captured by the Normans\, Romans\, Saracens and Moors which today has left a complex culinary trial. The  Influxes of different nationalities over many centuries\, the cuisine is so much influenced by French\, Greek\, Spanish  Maghreb heritages and has a very distinctive identity which is different in many ways to mainland Italy; If you have attended our Italian workshop\, this is very different with no recipe repetition. \nThis workshop showcases many of the island’s traditional and local recipes. Some of the highlights feature when in season\, blood orange and tomato aubergine\, pistachio and spice infusion\, spiced and roasted ceci and Moorish cumin spiced spinwheel pastries together with its legends\, superstitions and old wives tales. \n

DESCRIPTION:Southern Italy has always been a vegetarian haven; influenced by economics\, Saracen history and climate. Whilst it’s the home for well known pasta and pizza dishes\, the culinary repertoire extends well beyond these all too familiar foods. We venture out of the big cities tourist menus and share some of the region’s recipes. The emphasis here is “cucina casalinga” which is best described as home cooking although we do celebrate the course with some gourmet delights too. Tomatoes are a favourite ingredient and despite our familiarity with them\, often they are cooked incorrectly.  We show you how; The Amalfi way; In addition melanzane\, fennel and artichokes infused with lemon\,\nchestnut gnocchi\, aubergine involtini\, mushroom drenched in wine and much more.  Note; we make seasonal changes to this workshop.

DESCRIPTION:A culinary melting pot; for many\, this may appear a sophisticated extension to familiar Indian cuisine but\, by definition it is a delicious combination of native African\, French\, Chinese and Indian ingredients and flavours that come together to create a unique cuisine. As a colony of France during the 18th century\, Mauritius has had strong ties with French culture followed by the end of the 19th century saw the arrival of Chinese immigrants\, who created another layer to the established French gastronomy creating a truly unique fusion. Amongst this emulsion of flavours and ingredients there have been a large Indian community of workers during the 19th century who too added their spices to the pot! This workshop showcases the best of flavours infused with established French culinary disciplines as recognised today. However\, for a large number of food outlets it still remains the old style flocked wallpaper menus despite the fact the cuisine has changed dramatically in large cities throughout India. \nNew ingredients throughout India are celebrated and expanded beyond their traditional limits and old style heavy oil and spiced masala are replaced with olive oil and other Mediterranean ingredients and international spices. \nThe nouveau Indian lighter cuisine menu will come to some as a surprise and a refreshing change from the all too familiar traditional menus. Our seasonal menus include pomegranate paste aubergine\, olive and rosemary chutney soufflé\, sun dried tomato\, basil and chilli dosa style crepes\, fennel coconut and lemon bakes and the line up continues with a real contemporary twist of flavours.
