This workshop aims to showcase everyday ingredients re-applied in a different and sophisticated way to create an array of dishes away from the ordinary.
It often means thinking beyond the obvious; for instance when a bean is sprouted, it takes on a new identity as an embryonic plant and new food group packed with nutrition. Also cooking correct temperatures keeps the nutritional value of foods sealed which often is not discussed in the glossies.
