We think Italian and so often it is cheese and cream that can dominate its cuisine. The country’s large north/south divide that has been influenced over the decades by economics, climate and history has meant Southern Italy has been a haven for a vegan lifestyle. The tour guide will take the group away from the tourist menus and off into the beaten tracks to share some of Italy’s hidden gems that have been around for centuries but remained recipes for locals. Within this workshop, we unfold Sunflower seed griddlecakes, aubergine involtini, drunken figs, full bodied pepper and tomato paste and more are some highlights of this unique experience.
This is a real celebration of flavours under the sun and cuisine that can be applied simply at home to share with family and friends as indeed has been the case over the years within Southern Italy’s trattorias.
