There is a perception that cooking vegetarian cuisine does require some more thought over traditional cooking. However, it does overlap a large proportion of classic culinary disciplines albeit it sometimes needs a dimension of extra creativity. The classic techniques of deglazing, reductions, emulsions are all part of the workshop experience. Advanced food concepts and most up to date techniques and ingredients are included in the workshop which includes sous vide cooking, molecular gastronomy, smoking and essential oil essence extractions to name a few. The so often overlooked experience on culinary workshops is presentation and the final day is dedicated to plating, use of colours and more surprisingly for our students is “digital seasoning” capitalising on the newest research in food, technology and psychology.

This intensive course which normally spans over two weeks has been reduced to one intensive week and hosted by chef Francesco who has worked over 27 years training vegetarian cuisine and over the years in some hardcore gastronomy environments dealing with both vegetarian and non veggie food preparations so has a real commercial understanding of chef’s needs and expectations when dealing with an exclusive vegetarian menu. A large proportion of this workshop’s content is “structural cuisine”; how to take a concept and apply this across the board to include international ingredients, flavours and textures in order to multiply recipes.

This workshop is designed for anyone who enjoys either cooking at home to a high standard and is interested in a thorough grounding on vegetarian or for aspiring chefs or, chefs already working in the industry who are looking to expand their vegetarian repertoire.

Cooking vegetarian does mean expanding one’s creative mind and this workshop does challenge this head on. Given the intensity of this course, it is limited to 6 delegates only and each day commences at 10.00 and ends 17.00-18.00.Price: £1595.00
